Henckels Miyabi Birchwood SG2 8″ Chef’s Knife is fastened from 101 layers of SG2 Cryodur, ice-hardened powder steel that form a powerfully sharp microcarbide core. Utilizing an artisanal Japanese sharpening process known as honbazuke, the blade is intricately sharpened twice by custom whetstones and a classic mirror polishing technique for an optimized edge and angle. An eye-pleasing hamon edge adds to the sword-like qualities of this extremely durable knife that is able to take on a variety of food prep capabilities in your kitchen. Comfort and style are combined to produce the exotic Masur birchwood handle that boasts a mosaic center pin, engraved endcap,and red detailing that really sets this knife apart all others. The steel core has a Rockwell hardness of 63. For best results, sharpen with Miyabi sharpening tools. Hand-washing recommended. Includes limited lifetime manufacturer’s warranty. Made in Japan.
